Quick update on the progress so far:
I ended up removing the Decked system so I could have more flexible organization in the bed. So far I like it a lot better and will continue to hone the storage of gear and tools. The Decked system is really nice but for our purposes it was a bit much for what we need. We light light fast and simple so the truck will reflect that.
I also removed the RTT/awning. With the removal of all that weight (tent and awning and drawers total about 495 pounds) it drives light and spry and I'm getting about 20mpg mixed driving! The suspension is setup for weight and I'll put a different tent on it soon. It's kinda fun to experiment with the setup like this and really dial it in.
My son is trying to convince me to do a CAI but I'm not convinced it's worth it. Still thinking about that as well as a tune.
I also removed the back seats with plans to build a simple shelf over the storage area but one that's easily removable so I can reinstall the seats quickly when needed.
I'm not sure I'm super happy with the tires and might go up to 255 80r17 after driving these around for a bit longer. We'll see!
