Maybe, depends on whether the rack / bikes block any of the sensors. Nevertheless, given that your bike rack sticks out, the emergency reverse braking probably won't do much for you as it would probably trigger after contact, hah.
Correct, I believe that's the acronym. It's the one that triggers when reversing. Huge PITA and I just leave mine off as I tow relatively frequently. First few times hooking up I probably looked like a fool when the truck stopped on a dime and rocked back and forth. lol
With the u-haul trailers there's not much to worry about. They use surge brakes along with the 4-pin connector, so aside from disabling the emergency braking, just hook up and haul. You won't have to worry about adjusting the brake controller or anything like that.

Not saying it's impossible, but probably cost-prohibitive, similar to adding the trailer camera system to trucks that didn't come wired with it.

I don't think it will be possible to add PVM or MTM to a base model. As they are missing the camera hardware.
However, it is possible to enable MTM on vehicles equipped with PVM - as it is all the same hardware (such as a Limited or Sport Premium).

It is kinda pointless. Only actual service you get out of it is rotated tires.... which to be honest, I prefer to do myself, at least I know I'll have the wheels torqued properly. The whole point of the free service shenanigans is to get you used to going to the dealership to get your vehicle...

Not bad. I'm always nervous to sand when using touch up paint, just as I feel that I'll make it look worse than before. Though I've seen some some videos of some guys sanding touch up spots and buffing them after. Did you let the paint dry for a full day before sanding and buffing it?
